Here is a little more info on my cook. I use a hot peperoni mix in my ground meat that I use for smoked beef sticks. It has plenty of heat so no need to add any other spices for me.
I have my smoke cheese grated and ready. Fill the half pepper with the browned ground meat.
Get your cheese on top.
I use a double bacon wrap, can never have enough bacon
I lay one horizontal and fold over.
The second piece is wrapped around and sealed with a toothpick.
And you end up with something like this. Yummy
