I bought a whole chicken yesterday and came home and put Simply Marvelous Rub on and under the skin and took it out to the Pit Boss pellet grill and put some smoke on it for a while then raised to 375° to finish cooking it. Once cooled somewhat, I cut the white meat and a little dark up and made Chicken Salad. I have slivered almonds, fresh parsley, fresh taragon, mayo, juice of one lemon, salt and pepper, gala apple, granny smith apple, red grapes, celery and red onion along with the smoked chicken.I love it, my wife doesn't care for it though
I made myself a wrap for lunch. Red leaf lettuce, Swiss cheese (on bottom, out of sight), on the vine tomato slices and of course the chicken salad. Wrapped up, served with a kosher dill pickle spear and kettle chips. Washed it down with Iced Peach Sweet Tea.
