Was thinking about dinner and Kimmie said you ever going to do that Pickle chicken again?   I said YEP, tonight but as a whole breast and fried in oil vs using the Air Fryer....

So I just got to looking to see what I had in the pantry and I had just gotten a new box of CaebQuick so I said "SELF" lets try something new :D :D

So instead of the 50/50 Almond flour and Parmesan cheese mixture I normally use I went with 25/50/25 That's 25% CarbQuick-50% Almond flour and 25% Parmesan cheese Then added 1 tsp salt, 1 tsp garlic Powder and 1 tsp pepper

Chicken soaked in pickle juice for 3 hrs (more would be better)  then patted dry then into egg wash then into the 25/50/25 mixture then in to the fridge to set the coating a little

Fried in oil til golden brown and let drian on papper towel.      All that was missing was the bun and the "PICKLE" !!  Very close to Chick-Fil-A

Man that looks good Tommy.....I love my air fryer I really do....But nothing beats real oil for taste

True reason I wanted to see the difference in frying vs air fryer and there is!  BUT, I wouldn't want to cook them this way eveytime though.   OIL cost, smell, mess and clean up  :o are much worse than an air fryer

That looks great!!  I must try the pickle swim and then give them a ride in my air fryer.  I am intrigued!

I agree it is like Thanksgiving you would not want it everyday but it is special

Have you seen the Serious Eats report on home-made Chic-fil-a?   I used their process once before (also before I was low carbing it) and it really does taste like a Chic-fil-a.  I was telling the wife earlier tonight I think we should try that spice mix with CarbQuik and pop some in the air fryer to see how it works.  My thought was to use a light coating of mayo to get the flour to stick.  That is what I do when I grill boneless/skinless chicken.  Just enough mayo and sprinkle with my favorite rub and grill.
