Venison goulash

Since longer time I've been graving for dutch oven cooked goulash, so today I seared meat from 2 venison shanks - bones included - and then 2 large onions in my 12" dutch oven.











This was seasoned with original Hungarian paprika, black pepper, red pepper flakes and chocolate-salt. This was blended with tomatoes and a bottle red wine. The roasted bones were added again. Then the goulash was cooked for 2 hours.











Then the goulash was served with pasta, pears and lingonberries.







For dessert we had some grilled parlines with strawberry icecream.

You mentioned "chocolate salt"...can you explain how that is made - or where it is from?

And - I saw your use of lingonberries...LOVE lingonberry! IKEA sells Lingonberry preserves/jam....but that is all that I can find.

It's produced here in Germany and is made of seasalt, cacao, vanilla, sugar and Piment d'Espelette.

I guess it's similar, but there's no vanilla nor Piment d'Espelette mentioned.

This looks like a nice cold weather meal to me.  I might just have to make an elk version if it ever gets really cold here.  I am getting ready to go ride my bike.
