Have you ever hot smoked Atlantic salmon filets? For some delectable results preheat your gill to 180ºF with cookinpellets.com Premium Mix. Then smoke the salmon for an hour at 180ºF, bump the temp to 225ºF till the internal temperature reaches 145ºF (about another 40 minutes). No need to brine the salmon - just use some of your favorite seafood seasoning and let your wood pellet smoker-grill do the rest. I used layers of garlic salt, lemon pepper and Old Bay. Added steamed zucchini, yellow squash, and broccoli for a low carb dinner.

I did something similar to this not too long ago with delicious results, too.  Since I didn't have any of the traditional flavors/spices used on salmon I tried a light sprinkle of Smokin' Guns Hot.  No kidding.  It was a gamble.  Paid off, though!  I got depth in the flavor overall that wasn't "barbecue" tasting at all.   The salt in the rub also helped keep the skin side (which I love to eat) from getting mushy.
