Cod, venison, pork, dessert

Yesterday I had some guests for dinner. As I wanted to make some pulled pork, I rubbed a butt with Fine Swine & Bovine on thursday and started friday night cooking that butt on the egg at 225°F with hickory and cherry wood.



14 hours later:



As my guests arrived I plated up some Super Pig-rubbed MOINK-balls, that were glazed with Bulls BBQ-sauce and tossed in potao-chips crumbs.







First course of my menu was cod on couscous, cooked in banana leaves.









Next course was venison loin, that was seasoned with Steak Savor and then plated with broccoli mousse and onion confit.

















After 20 hours cooking time the pork butt was done, pulled and blended with a Lexington-style sauce.





You can plate pulled pork and cole slaw tidy...







...or messy - both ways taste great.



Dessert were filled nectarines and strawberry-marshmallow-kebabs.

Wow! WC that whole meal is just amazing and creative! You must have huge following of friends fighting to come over and eat at your place. ;)
