Started with a whole chicken...



Light Mayo, M-3, and hickory smoked salt...



First I squeezed lime wedges into the cavity. Then placed the wedges in there and dumped in some M-3...



Mixed up the paint...



Time to paint the chicken...





Then it rested in the fridge for a few hours. After the rest...



I decided to go Captain Jack style and put her in the Big Easy basket head first...





After one hour...









Plated with salad and Texas Toast...

Wow, that's a beauty ... I haven't really experimented with mayo as a binding agent but that looks delicious.

Plating and pic quality was great. Bet that skin was some kind of good!
