Ham, Green Beans and Potatoes

Aug 07, 2013

It has not been a good week so far. I call my 91 yr. old Mother every day and Mon. she said her sister had died. She is not able to go to the funeral but I am going tomorrow. Today when I called Mom she said she is going to the nursing home. I hated to hear that but it is good she made the decision herself.

My wife is going to have total knee replacement in both knees on Sept. 9th. We will be busy until then with tests and Dr. appointments. I might not be in here as much for a while but will check in when I can.

A favorite meal around here when the fresh green beans are ready in the gardens is ham, green beans and new potatoes. My butcher says they know when the green beans are ready because they have a run on smoked ham hocks. I had a ham bone froze from a smoked ham shank I smoked for ham salad and a few pieces I saved. I had a nice mess of pole beans from my garden and bought some baby gold potatoes to use.

At 1:00 AM I put the ham bone in my crockpot with a quart of chicken broth, about a quart of water, two celery stalks, a carrot and some salt and pepper. I set it on low. At 11:00 I took the ham bone out and let cool. When it cooled I shredded the meat and added it to the pot along with the pieces of ham. I added the potatoes, green beans and a Vidalia onion I sliced and quartered. I set the Crock pot on high for about an hour then back to low until supper time.

This made a great meal and wished I could have it more often. I served it with some cheese rolls I toasted under the broiler with some gorgonzola chive garlic butter.

So sorry to hear about your aunt and wife Don.  The ham soup looks great.  My wife does a near identical (used cut up russets instead of new potatoes) one that I love.

Don,
Sorry top hear about your aunt.

My wife had her hip replaced several years ago and will be getting at least one knee replaced somewhere down the road.  The doctors can do some amazing things with hips and knees today.  She was up and walking several hours after her surgery.  Will keep both of you in our prayers.

Your meal brings back fond memories of a dish my mother used to make.  Man, that looks good!!

Don you have my condolences on the passing of your Aunt. And being your mother made that decision at 91 years old shows that even though she might be having trouble taking care of herself she still has her mind to know when she needs help. Also sorry to hear that your wife needs knee replacements too.

As others have stated don't stay away for too long.

Food looks great as usual and love the look of that bread!
