Perfect Prime Rib in the Oven!

There WAS a post on the other reflector about doing a prime rib in the oven and asking for help.  My response.

I've done over 25 prime ribs in the oven and they are perfect every time.

Get the exact weight of the prime rib.  Season it completely and dust some flour on the fat cap.  Put in the fridge over night and do not remove until ready to go in the oven.  Preheat the oven to 550 degrees.  Lets say you have a 10 pound rib.  The magic number for med rare is 5.  5 times 10 equals 50 minutes in the oven at 550.

Take the rib from the fridge and put bones down on your roasting pan.  Put in the oven and set the timer for 50 minutes.  When the timer goes off, turn off the oven but DO NOT OPEN the door for 90 minutes.  When 90 minutes is up, take out and behold a crusty rib that is perfectly cooked.  Perfect every time.

I personally have the butcher remove the bones, season inside and then tie them back on.  Then when you are ready to carve, you just remove the bones and is ready to slice.   The following day, I grill the beef ribs with BBQ sauce and WOW!  Enjoy  Phil   I season with Awake-a-Steak........

Oven...what's an oven??  Is that something you use indoors that has no flavor from burning wood and charcoal???  8) 8)

What does dusting the fat cap with flour do??

P.S.  It sure is good to know that the turtle will not argue with us LTBBQ members about prime rib or brisket  ;D ;D

Or on Christmas Day 2010 when it snowed on Christmas for the first time in Alabama history as far as I know. The oven made a mighty fine prime rib that day, and my wife did it all while I mixed the Mimosas.

I gotta confess when Mama did the turkey in the oven last Thanksgiving it was real tasty and the house smelled like it did back in the 60's and 70's when she did all the cooking.......

I agree with 2P on this one..use what ever is available.But I still want one of them outdoor wood burner cooker thingis that africanmeat has to cook pizza and bread in. I just found out last night that my stepson can lay bricks..I think I got it made now. Someone had one on a trailer. I found a pickup truck bed on a trailer..wonder if that would work. Just latch on to it and go.  Suggestions anyone?  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Flour on the fat cap! ... It absorbs some of the fat and then browns.  Just that first look that makes you hungry.  There are many things I do in the oven.  Just another tool to have fun with if outside isn't pleasant.  Smile everyone!

Nice tip about dusting the fat cap with flour. I'm going to have to give that a try next time I do a Rib Roast.

Yes, Phil had shared this recipe with me at Christmas, and even though I forgot the part about putting it in the refrigerator overnight (it only got about 3 hours) it was a VERY tasty prime rib. Everyone said 'hey let's do this again for Easter." I used to make them several times a year, but at today's beef prices it will probably be a once or twice a year thing, unless they start putting more coins in that cooky jar I set up by the stove with a big sign on it that reads "Go Ahead, Rib Me A Little", so we'll see. 8)
