Cast-Iron Oven Pork Chops
« Reply #-1 on: December 29, 2013, 09:42:16 AM »
It has been pouring rain all day yesterday so I decide to do a couple of 16 ounce PC’s in a cast-iron pan.

Started by marinating them in some Worcestershire sauce for a couple of hours, into a hot pan to get some brown on them and for the last part they go in the 350 oven for about 15 minutes.

Nothing complex, nothing special, noting stuffed, just plan good.

I'd eat that! One of my favorite cooking methods for steaks or burgers is cooked in cast iron out on my CampChef stove on the deck. Last night my wife had cooked up a mess (you have to be from the South to know how much a "mess" is) of Collard greens and made some mashed potatoes. We had some thin center cut Duroc pork chops we found at Piggly Wiggly and I cooked them on the stove in a cast iron skillet. She also had fried up some cornbread (another Southern thing). On a cold, dreary night it was fine comfort food.
