Smoked Salmon Bites

Here goes my first cold smoke attempt.  I've got (brown sugar, Kosher salt, garlic powder, onion powder and chipotle powder) in the brine and then just cut the salmon up into "Bites"  Let them brine while I am at work and then on to the smoker.  I'm going to use my new A-Maze-N 5x8 with perfect mix pellets.  I'll update you guys as I go.

This was waiting for me when I came home at 6 am.



After a quick bath in Teriyaki sauce, I put them out to dry.




I then got the A-Maze-N 5x8 going.  Man that thing puts off some smoke.




After some cold smoke and then some low smoke they are ready.





They are so FREAKIN FANTASTIC!!  I doubt they last a day.

Yeah I can get on board with those! What a great idea. I am definitely going to have to remember this idea next time I want to surprise my wife who loves smoked salmon.

I'm also thinking these would be great for the Fall gathering this year!

I just used the A-Maze-N smoker for the first 4 hours and then after that turned on my GMG to 150 and let her sit until the bites reached around 145 IT.  I started them on the grill at around 7am and then pulled them off at around 3pm.  The best part was when I put them on at 7am I finally went to bed and I knew that I didn't have to worry about them.
