Zuppa Toscana...

.. is a soup served by the Olive Garden. We love it, and looked for a copycat recipe which we found. When I went to work this morning, my wife mentioned that she was going to cook up some kale we had - I remembered zuppa Toscana, of course. I planted the seed of the soup and she thought it a wonderful idea. However, she took changed the ingredients considerably to suit what we had in the fridge.

Looks good!!! One soup I never tried but would taste great in this frigid weather! Never got above 9 deg. today. Don

I guess I need to try that the next time I am at OG. I always get the chicken gnocchi (which I love), but since you can get refills and switch soups...

Never had that soup at OG. I always get the Chicken & Gnocchi. Might have to try it next time although I am not a huge fan of Kale.

Definitely worth a try. I disliked kale until I tried this soup. They chop it fine enough so I didn't realize it was kale
