TBE Ribs

I had an event yesterday and I was on the hook to do some ribs. I originally planed on smoking them in the fatboy but we were scheduled to have 5 inches of rain so I adjusted my time to do them in TBE in the garage. Turn out that we didn’t get any rain and since I already adjusted my time they were still done in TBE but in the back instead of the garage.




Got the A-Maze-N Tube going in TBE and put ribs in for an hour of cold smoke


Covered the top with my pizza stone to allow as much smoke as possible


Hour of smoke


Rubbed and ready to go in the heat



After 45 minutes or so they were pulled and foiled and back in for another hour or so.


Sauced them and back in for another 10 minutes


Cut and ready to go


Good food all around.

Nice! It still amazes me how good ribs come out in TBE.
Everyone was saying how good the ribs were and I heard someone say "I think he boiled them". That got a BIG NO  ??? - I don't boil my ribs (anymore) ::), But how do you make them so tender.  ;D

I still like ribs slow cooked over charcoal as my favorite way of doing them but you can't beat TBE ribs.

How was the smoke flavor? Was it too strong or just right?
For me I thought it was a little light and would go an extra half hour if doing them again this way, but I had a couple of guys that know ribs say the smoke flavor was good.
