I decided to try out my new jerky gun for the first time. I got 4 lbs of 80/20 ground beef. And I used the Backwoods seasoning that came with the LEM jerky gun. I only used 3/4 of the packet due to others complaining using the entire packet turned out to be way too salty. But I did add all of the cure #1. The gun worked well and was easy to use & clean.
I made some flats and rounds using the two different provided tips. Put them in the OBS with 1 1/2 hours of Apple smoke and convection fan on. The temp started at 170F for a half hour then I dropped it to 155F and slowly progressed the temp up until it was at 170F. They took about 7 hours to dry. They tasted very good but could have used just slightly less seasoning

You will need some type of frog mat or jerky screen or the beef will fall through..
