Homemade Spicy Potato Chips

Did some research on making homemade potato chips in the airfryer yesterday. Lots of recipes out there but none that said HEY make me. LOL
So I found one that uses deep frying in oil that sounded good. OK I said I will go with this one for the spicy part of the recipe.
Addictive Seasoning:
1 tablespoon kosher salt
1 teaspoon black pepper
2 teaspoons paprika
1 teaspoon dried thyme
1 tablespoon brown sugar

Now back to the Airfryer method of making potato chips.
First thing you need is one of those mandolin's which I do not own  ::) so I used my big Hobart meat slicer.  :D
Sliced up three medium potato's and threw them into a bowl of cold water with 3 tsp of salt for 30 minute to draw out the starch which will help them not stick together when they are frying. Of course, now your potatoes are wet so you also need to dry them a bit before frying. After drying them the best that I could I thought this might be a good time to add a layer of the "additive seasoning" so back into a large bowl they went and got a dusting of the seasoning.

There are all kinds of recipes for airfryer chips and different times and temp settings but the one I went with was 170F for 20-25 minutes with giving them a toss every so often. For the final temp it said to use 400F for 5 minutes. Turned out the final 5 minutes was a little to long and my chips are pretty crunchy  ;D
I'm sure my kid will just wolf them down anyways.
As for the "Addictive Seasoning" it was nothing I would write home about. Next time I would add some hot pepper spice to the mix to kick it up a bit.  :thumbup:

Looks very nice. I bet some red pepper flakes or chipotle powder would give that a good kick!

Those look pretty good. Like you say, maybe a little crisp.
I have tried to make chips a couple of times with no luck.
Yours came out better than anything I have done.

If you don't want chunks of red pepper flakes, I have used my magic bullet or spice grinder to break them down..just sayin  .☆´¯`•.¸¸. ི♥ྀ.

A little side note if you ever try this. The airfryer needs more care when cooking than a deep fryer. To get a good even cook I gave these a good toss every 4-5 minutes. Very time consuming, not a set it and forget type of cook  :)
