My Costco finally had some pork belly cut in strips in stock.
I bought about 5.75 lb pack and decided to try making some pork belly burnt ends.
After looking around the interwebs I decided I would use Malcom Reeds recipe.
I had just ordered some of his BBQ Rub and figured I would try that out but the post office had other ideas and my package was delayed, so when the time came the only rub I had enough to coat them all with was Memphis Dust, which ended up being pretty good.
I cooked them on the Weber using the Slow and Sear with some Kingsford and a few chunks of apple wood
They ended up tuning out pretty tasty and everybody loved them. Soooo rich and melted in your mouth.

Those look great. Haven't found any belly, but did find a package of "Pork for Stew" at Sam's yesterday. Looked like cubed up pork butt to me, so I thought I'd run at turning them into "burnt ends." Let you know how it works out.
