The legs were marinated overnight in Wishbone Italian dressing. I took them out of the marinade,
dried them off and seasoned them with Mo Rockin. I put them back into the refrigerator to continue
to dry off and absorb the Mo Rockin.
Once I took them out of the refrigerator I decided to kick them up a notch. So I wrapped each leg in
some center cut hickory bacon. The legs were then seasoned with Super Pig.
Put onto the Performer using KBB and a couple chunks of cherry wood.
After 10 minutes I went to check the temp of the grill since it was burning real hot to start.
I closed down the bottom vent some to bring the temp to around 375.
Legs are just about done so I added a pot of Bush Baked beans to the grill to heat up.
Legs are done!
Plated with fried potatoes from last night’s leftover baked potatoes.
Chicken was delicious and the bacon took it over the top. It is really not something I will do every night,
even though you can never have enough bacon!
