Title: 60 day dry aged bone in rib roast

Picked this up from my butcher that dry ages on site. I won't divulge the cost of it but it was around the cost of a tank of gas for my pick up. Oh well ya gotta splurge sometimes. I got it near room temperature

Hit it with a little voodoo I got from a buddy..

Made some pockets and stuffed in some garlic cloves

Had the Mak set at 325. After an hour I added potatoes and some baby carrots

After 2 and a half hours

Took the veggies out of the pan and broiled for 5 mins

Played with some crescent rolls and a little gravy

Scally, that looks delicious. Was it more tender because of the 60 day dry age? How did it compare to say a 28 day dry age? Just curious.

Scally, that looks delicious. Was it more tender because of the 60 day dry age? How did it compare to say a 28 day dry age? Just curious.
It had a really different flavour.. More pronounced beef if that makes sense.

Ditto that!  I'd walk to work for a week in exchange for that meal!
