Title: First attempt at Pastrami...

You guys are killing me.... I keep reading and finding new ideas.  This time, I found the recipe from Hub on the EZ Pastrami and had to give it a go.  This was more for me than the family.  The wife might like it, but the kids will not.

I followed the recipe to the letter and it came out pretty good.  The main issue was the fact that my local Walmart was out of Coriander so I had to go to a couple of stores to find some, eventually finding a roasted version.

Got the meat washed up and dried (actually 3x over a day and 1/2)

The Spices mixed up - did not seem like enough, but it surely was!

The only problem - no way to really get it sliced thin.  It was enough to make a good sandwich with Munster cheese and yellow mustard.  Overall, not really salty and pretty good flavor!

Will have to find something for next weekend....

One of these days I am gonna get a meat slicer..............

I would sure love some of that pastrami......what a great first attempt  8)

Thanks all... I am not sure I could convince the wife to buy a slicer though...  This attempt still reminds me a lot of Corned Beef - except for the seasoning.  I think I will have to try another sandwich....  ;)

Looks good Eric!!! I use Hub's recipe for pastrami and love it. After the overnight soak and rinses, I get it seasoned and then plastic wrap and let set in the fridge overnight before smoking. I have a Chefs Choice Mod. 610 slicer and love that thing. I don't use it often but it's great for thin slicing ham, beef and pastrami. Don

I love Hub's recipe.

Looks real good.

A proper slicing knife would help to get those thin slices. Not as close as a meat slicer. I used to have a German one. The ex wife kept it :'(

Any recommendations?  I guess I could ask my brother - but he is in Australia and not as accessible.  (He has worked in the food industry as a chef for many years...)

Messermeister makes a great slicing blade. Mine was a 10 inch round tip. Flexible blade makes fine slicing easier.
