I have two ideas to fix the high charcoal use for small cooks.
You could slide refridgerator magnets over the 4 upperholes& a large magnet over the intake hole after the cook is over.
Second I've made smaller charcoal rings for my WSM & Kamodo to load less fuel for shorter cooks that should allow less fuel for shorter cooks

Unfortunately if you do that LA, it would mess up the way the pit runs. It was designed to run with the bottom vent set to your altitude and with the 4 holes to have the rebar ran through them for the cook. This is nothing like a UDS where you can get away with adjusting the airflow to slow down the burn. I have learned with my PBC to just light the coals,wait 20 minutes and get cooking and I just gotta say it:

  "It is so neat, to hang your meat!!"

Once you get a PBC,you can never move again!! :D  Chances are the setting will be fine. If you notice your food is cooking slower than usual you can open up the bottom vent a bit and if your food is finishing faster than what you are used to,you can just back it off a tad.

Give Amber a ringy dingy Mike and she will get you your tracking number...and remember, your PBC needs no break in so you can be cooking in about 30 minutes once you get your delivery!!

and I gotta tell ya, the more you use your PBC the more flavorful the cooks get, I was just lining foil in the bottom of mine for tomorrows cook and I cant believe how good it smells inside that barrel!!

Dont forget to get your Original Kingsford and Kingsford lighter fluid!!  ;)

Yup! A co-worker of mine loves making brisket. I asked him how many times he gets up to tend to it. He says a couple 2 , 3 times. Uugh.

Talk about fast shipping. I called just a few minutes ago and Noah picked up. I asked about the tracking number. He apologized and said that their system is set up to send it out to the email address the customer provides and doesn't know why it didn't send it. Long story short, he asked me to send him a quick email and he would reply back with the tracking number. He was out of the office at the time. VERY NICE GUY. He said the PBC HAS BEEN SHIPPED ALREADY. I placed the order last night :o

100% agree. Was kinda weird listening to him talk cause it reminded me off all the videos I watched online. I contacted them to see about a tracking number. Wasn't expecting him to pick up :o
He did end the conversation by thanking me for my business and to not hesitate on calling him about anything.

It amazes me that for the small amount of money that the PBC costs - you get a quality, consistent - almost goof-proof cooker - that can re-create ( for me) real "Western Style" pit flavor.

We have all spent more than the PBC costs on cookers that - if we are honest about it - have been pretty disappointing.

Great value - and Noah and Amber are building a great American success story with their business. It feels good feel - kind of like we are a part of this as we watch PBC grow!

Hey, Squirt, you checked out the new Chubby2, yet? Sold my 2010 Chubby and bought a PBC, for chicken cooks.  Pretty steep price on the new Chubby, but it will fit a full sized packer. Trying to figure a way to do one on the PBC. Any ideas, Noah?  :-\

Pizza is on the grill grate using a pizza stone, depending on the thickness of dough it should take about 25 minutes with the lid cracked just slightly, same amount of charcoal. Remember once you get a few cooks under your belt you can experiment with amount of charcoal. Since you will be a pro by then :)

Wings too? Delicious on the PBC also!! Here's how we do ours, take a bag or pack of wings season them with the all purpose pit rub toss them on the grill grate for about 15 min each side then remove them and brush them with your favorite bbq sauce/hot sauce and let them cook an additional 15 minutes or to taste. They are seriously the best wings I've ever had!!

Regarding brisket, my puter's sound system gone away, ergo, can't hear what the man's saying in brisket video. Refresh me, please, ie; what's the yellow stuff in the bowl? What temp did you wrap? What temp did you take it off cook to rest? Did you or do you inject? Ever tried butcher's paper wrap? What was your mop sauce in the wrap? Yadda, yadda, yadda! Inquiring "compers" would like to know!! :-\ ;)

That is olive oil in the bowl. Rub the briskie down and add your favorite rub.

follow the hook placement in the video and you will have no problems with it falling.

When the brisket reaches 160 internal remove the brisket and foil. You can add liquid if you like....I like to splash in some lager beer and some white onion and jalapenos.........

Place the cooking grate in the barrel and set your brisket on that......always put the re-bar back in place..the pit runs at its optimum when they are in place.

Pull the brisket around 195.  I like to use a probe and run the lead out through the opening in the rebar hole. I rest my thermo on the horseshoe handle!!

My first cook was a yard bird halved. Took right at 1 hour. Was at 170F. I'm at 16ft above sea level.

Just took a slab of St. Louies off the PBC after two hours and forty five minutes, burnt to a crisp! ??? Things must be different in Denver. Anybody else cremating their ribs on this smoking? machine? Will cut back to two and see.  ::)

Thanks for responding!  Still working on the hubs here.  When I said I wanted one he started counting off what I already had.  I reminded him I gave away my 2 charcoal cookers this summer.  So we will see if "the pout" works.  :D
