This was a fun cook. I tried a few different things on this rib cook. Fired up the can from the bottom (really easy). Got everything up to temp. I used my plum wood. Love this wood. I layered my honey rub one one rack and my pecan rib on the other rack. 1/2 hour of sit time. then a little Dirty Bird hot. Layered flavor. Nice. Everyone in the pool. Cook temp is 300°. One hour naked, one hour wrapped with my blues hog. Good stuff. At the end I used a little black cherry and grape habanero glaze. Oh these were very good. My son ate one rack (gave me a bite of one rib) and my wife ate the other rack. She didn't share because she said they tasted to good.
note to self:. Cook ribs when no one is home next time. All in all a great cook. I'm getting better at this.

No surprise Sparky has good ribs. The hunsaker baskets are nice. We added those to our drums. We only do pork butts on the drum now

No, I don't take notes. I just remember what taste icky. I probably should take notes. It just seems like too much work. Bbqing, drinking and writing stuff down. I can only do two of those things.

300* sounds like a HOT temp for smokin'...most everyone is keeping it between 225 and 275. Howsomever, you're outside the box again and present some great looking ribs with that elusive texture.
I'm betting that I won't be the only one cookin' ribs at 300* next time. Imagine cookin' em for only 2 hours and NOT using Tenda-Rub. That would make a big difference in the whole cookin' experience.
I'll let you know how they turn out for us and I'll be watching to see how the other's ribs turn out.

300 degrees and Tenda rub!!!!!! There wouldn't be any bones left :D :D

Is 300F possible using TendaRub? I mean NASA uses that stuff to power the Saturn V rockets.
Smoke must have a couple jars laying around. lol :D
