Decided I need to keep up my rib cooks so I can improve on them, but also need lunch for the week. I cooked baby backs and found some "boneless ribs" ;)
I used my low carb rub and low carb sauce for this cook

They look a little dark but boy they were very close to what a rib should be. Thanks to Sparky my ribs are MUCH better!!!
Also did a few sausages and burgers while waiting for the ribs to cook :D :D

Nice job on those ribs!
Those boneless country ribs on a stick remind me of something I haven't seen in years. When I was a kid, my mom used to get boneless ribs on sticks like that, and they used to call it "City Chicken" (not sure why).
