This should be fun. Learning cheese making and hopefully smoking some of it.

Can't wait to see how the brie goes. I've made mozzarella, riccotta, and queso fresco. One of the best parts (to me) besides the great taste of fresh cheese is the ability to add herbs, spices, etc. that you can't find in the stores. I'd like to try brie but have felt a bit put off - looking forward to hearing about your experience.

awesome,  watching patiently

I have done some fresh cheeses , cheddar and montery jack.  It takes more time than I was able to devote to it.

I'll be following this one, too.  I think it would be fun to do at least once.  I bought some of the charcuterie dry bags a while back.  I want to try my hand at that first.  Being retired, I have lots of time on my hands.  Too much according to my wife.  She thinks it just leads to trouble.  She may be right.  The trouble usually starts with a capital "T", and Tee is generally involved, too.  I'm sure his wife is on the same wavelength as mine.  YOLO!!
