Haven't been on a while...but I be a cookin! I cook ribs and Chicken every week on my PBC. Here is a past cook on my PBC of a pork butt for Chile Verde. Chiles.tomatillos done on an other grill. I will never cook a butt any other way except on my PBC...flavor is amazing!

Yes I have...about 6 of them. ;D I didn't mention it as no pictures didn't happen. :( But this is how I did them: Of course full basket of charcoal. I found I preferred using grill over hanging. For 2 hrs on one side, flipped over 2hrs on other side. IT usually was 180 at that point. I then put in quarter(steam size) aluminum pan and covered with HD foil. (Sometimes added liquid, but preferred without)Before putting back in I shook the coal to knock some ash off. Put grill back on and put pan in. Surprisingly it reached 200 in as little as 3 hours! Talk about a power cooker! I would wrap whole pan in large beach towel and set in microwave for an hr or 2. Like I said love the butts this way!

So about 7 hours total (definitely a full basket of coals here at sea level) for one or two 8-10 pound butts?
