So, the Panthers did end up backing into the Playoffs, and the (extended) family was still in town after New Years, so it was time to pull out the Playoff Chuckie ! ! ! !
7¼ lb. chuck roast (from Sam's) that was injected with Butcher BBQ Brisket Mix & Lea & Perrins and refrigerated overnight. Saturday, it was rubbed with Montreal Steak at 1:00 and rested on the counter until Little Man (Weber 22½ Kettle) was at temp., approximately 2:20 pm.
Little Man hovered around the 250° – 275° range. I was using Hickory chunks for the smoke.
At 4:30, I removed the Chuckie (IT=116°) placed him in a foil pan and added a beer, more Lea & Perrins, and garlic, as the Doctor ordered. Wrapped the pan in foil, and put it into 275° oven. I removed it at 6:00 (IT=136°) so that I could finish it over at my parents' house and watch the second half.
When I got over there, it was back in oven (my parents’) at 6:45 (IT=150°). I finally pulled it out at 8:45, with an Internal Temp of 196°.
While it was resting, I put a couple pans of
mashed potatoes into the over to reheat.
It pulled as easily as any pork butt I've ever done.
Plated with mashed potatoes, broccoli casserole, corn, & gravy made from the braising liquid.
Sorry boys and girls, apparently The Panthers are for real, and, oh, there were no leftovers.
