Pork Butt Wrapped with Maple Syrup

Too damn hot to do any serious cooking, but WinCo had butts on sale for $0.88/lb. Found a nice 7.6 lb one and let it roll all day yesterday in the mini (that thing is a hot weather small cook savior). I don't normally wrap mid cook, but I was playing with a new rub that was a bit less sweet than I normally use on pork. To counter the rub, I wrapped at 6 hours (165 degrees) with some dark amber maple syrup. Pulled at 8 hours. Between the syrup and the liquid from the pork, there was a nice thin sauce in the foil to add to the pulled pork.

I buy a fair amount of meat there but you have to watch for their sales or they are a little on the high side price wise. When they have a sale it's usually pretty good. Last week they had fresh chicken hindquarters for .39/lb in 10lb bags. Lots of places have had them for .49 but always frozen into a solid lump so you have to thaw and use the whole works at once.

Thanks. We have a lot of high end grocery options in my town that I mostly avoid. I've been cherry picking sale items a lot lately from different places. I buy most stuff at Costco.

Yup on Costco. Lately they started carrying pork bellies for 1.99. Had to buy some to try my hand at bacon. It's about the one thing I haven't tried, mostly due to being unable to find bellies. Then one day there they were! Eureka! Also buy all my brisket there, 3.79 for prime packers. Also buy a lot of meat at Fareway but IDK if they are in your area. Great meat counter though and really good sale prices on whole ribeyes NY strips, etc. They cut them for you free if you want. I usually just bring them home, trim and cut them and vac seal. They also have ground pork really cheap a lot of times and I make lots of sausages so I by it in 5 lb packs. Saves me having to grind up butts when I make brats, etcetera.
