Stuffed Latin style Poke Chops on the Pit Barrel Cooker

Stumbled upon some split poke chops in the freezer earlier in the week so here we go:
My gal was tired so instead of a homemade Colorado sauce I got some help from my friend Las Palmas!!
Soaked em overnight:


Used Cacique Ranchera white cheese and added some chopped white onion and cilantro:


Used Olive Nations Chipotle/Honey rub......most excellent!!


Man, am I stuffed!! ;D


Toothpicked together and rubbed down....will see you all later at the Pit Barrel Cooker!!

Nothing wrong with Las Palmas, they make a great product and even better if you tweak it a bit .. Anyways those chuletas (pchops) are going to be the bomb- can't wait.. A

Time to get the chops on. I put the re-bar back in place because the barrels optimum performance is based on having the re-bar in the holes. No probs, plenty of clearance!!


The side horse-shoe handles not only come in handy for holding the re-bar and the lid but also my thermo!!

158 internal time to come off and get more cheese and salsa verde


Add in some Mexican Rice and some chorizo beans and ya got yourself a smoked fiesta!!


The barrel cooked these thick stuffed chops in just over -1- hour!!  Outrageous!!

I put a pc of HD foil on the bottom for super easy cleaning and the pit worked just fine so that will be my preferred way to go!!

I thought the same thing. I thought this barrel was hanging meat only, didn't know you could put a grate in.

Yup it comes with a grate for items that ya cant hang...wings, beer butt chicken..stuff like that. I could've hung the chops but since they were stuffed with cheese I didn't. You can also keep the top off and grill with the grate.

The temp probe was just for the internal temp of the meat.....no need to check the  temp of the pit... ;)
