Pit Barrel Cooker Chicken Legs & Tri-Tip

Started out with Chicken Legs and Tri-Tip...



Now for some Way Out West marinade. 2 tablespoons W.O.W, 1 Tablespoon Balsamic Vinegar, 1 Tablespoon Smoked Salt, 1 Tablespoon oil, and 1/2 cup of water. Then into the vacuum tumbler with the legs for a 20 minute run...









Now I incorporated the Big Easy basket for using in the Pit Barrel. I used the leg racks and bunk bed in the basket and hung it by the hooks in the Pit Barrel...







Into the Pit Barrel with iGrill on watch. Meat probes in a leg and the Tri-tip...



Both the legs and the Tri-Tip finished at the exact same time! Cook took just under an hour. Legs were at 160F and Tri-Tip at 135F with the fastest Green Thermapen check. Now when does that ever happen?

















Although the color of the chicken might be a little less appealing due to the green color of the marinade the flavor was outstanding. Very moist and juicy. My 4 year old at 5 legs! The skin was not super crispy but bite-through quality. Part of this might be due to the marinade. I am sure dry seasoned legs would come out more crispy.

The Tri-Tip was very moist and tender. It had a charcoal flavor profile that was fantastic and so did the chicken.

I am really impressed with this "set it and forget it" cooker. Just load and light the coals then 20 minutes your ready to cook ;)

I might have to order a SRG basket set-up!! What a great idea and a great looking cook!!

Muebe..we can only get pre marinated tri tips here..wahhhhhhhhhh..it looks fabulous..Had my 1st tri tip at the gathering. Great cook. Great idea with the srg, tbe or beesr basket too.  Pam .☆´¯`•.¸¸. ི♥ྀ.

That graph tells it ALL..... Anyone that doubts how well the PBC cooks needs to look at that! Still - I scratch my head at just how consistent this barrel is.....And - it is obvious that Noah did the homework to make it work like this.
