First PBC Ribs and then some!!

Posted this thread here because of the multiple things made.
Made some yucca in olive oil, onion and garlic.





Fresh yucca peeled, boiled till tender like a potato. Put 1 onion and I head of garlic in olive oil and heat up till translucent. Not trying to get any color  just getting flavor into the oil. Also salt to taste.
Once boiled, you need to take the fibrous middles out of the.


Made some chicken quarters, spares, and fajita meat. The chicken seasoned with PBC All purpose rub, the ribs and fajita with fajita seasoning. I wanted to get the natural meat and charcoal flavor to shine thru.












Anyone recognize the piece I used to hand this with? PBC hooks all used up and needed one extra :P

The ribs were absolutely delicious. Perfect bite to them. Charcoal flavor was there, you could taste the meat and then you got the sauce flavor. They were in there for about 1.5 hours then sauced and put back in for about 10 min to set the sauce.
The wife said she prefers the ribs in the PBC over the pooper :o.

What a great cook. I would have to say that those are some of the best PBC ribs I have seen. Look perfect. Bet they were really good.

I was trying to fit another Lil piece of trimmings but I couldn't find anything else ;D. I have to SRG rib hooks that I've never used but I couldn't figure out how to make them work. Had too many things going on at once. :P

Chicken and ribs are some of my favorite eats. You just gotta love the PBC.

It's a root vegetable. Like a potato. You treat it the same. Peel and boil, fry. Make chips out if it. Put  it in stews.

nice looking ribs and chicken.  i liked how you sauces your ribs and put them back on.  i like my ribs cut in 1/2 also on the pbc.  nice cook buddy.   8)
