magic meat resting with some IG- Awake-A-Steak (thanks Phil), garlic powder & pepper
going on the OldSmokey with a chimney of Stubb's briquets & some mesquite lump

I looked at 3 different stores and no one in this area caries the Tri.

Rad, Costco here in Birmingham carries it and one Piggly Wiggly here carries it.

RAD - I have the same problem. Finally called my favorite butcher - he said if I give him a day's notice he'll have what I want. Pricey, yes, but will finally try it (when the snow is gone... more forcast for tonight...)

ask your butcher to just give you the rough cut tri-tip and tell him you'd rather save the money and do the trimming yourself.

David, I only have two sources for tri-tip in my part of Houston
I can pay $6.50# for choice, "trimmed" (fat cap removed) at Costco, a west coast company
or I can pick up select, un-trimmed (with fat cap) for $4.47# at our local chain, HEB

I've bought three of the cheaper selects and they have all been excellent
the one above, I trimmed the fat cap off myself and saved $2# on a 3# roast

None at Kroger?  They don't always have it, but normally they carry it in North Texas.  Both of my regular butchers have it as well and put it on "special" for $4.99 regularly.

Nice looking Tip there Captain.  I've got one seasoned and resting in the fridge for tomorrow when our Son and Grandson visits  :)  It's hard to beat a Tri-Tip! ...
