Super Pig Short Ribs

That posting that Captain Jack did about short ribs got me a hankering for some. So I picked up 3 packs from the store...





Now to break out the Super Pig from Savor Spices...



Short Ribs liberally coated....



Fired up the PTG set to 210F and loaded with Perfect Mix...



After 20 minutes it leveled off and was holding temp within a few degrees so ready to load her up...





Gonna let them go for 3 hours and then braise with a blackberry tart ale ;)

Ok so they have been on for 2 1/2 hours at 210F. Time to pull them off...



Looking good but not done yet....



Pyrex dish with blackberry tart ale in the bottom...





Into the pool...



PTG bumped up to 350F and two Pyrex trays are in tightly covered with foil. Weird... A couple small short ribs went missing? ;)



Going to let them ride for 45 minutes.

Then I decided to make a finishing sauce for the ribs. Started with sugar...



Blackberry tart ale...



Slowly simmer until reduced and thickened...



Once cool then refrigerate to thicken more. Should be like a glaze when cold. Should make a nice flavor profile to the short ribs when done.

Remember the beer glaze from earlier. Time to give them a coating...



Then back to the PTG at 350F for 10 more minutes...



Now they are done... Whew ;)





Plated with pasta and veggies...





And the first bite shot...
