Rick, the timing for your threads on this couldn't be better. Ironically, at the wife's request, I recently picked up a used refrigerator for doing my cold curing. She wants her refrigerator space back!
I've been reading about this some on the SausageMaker.com and was considering a similar mod, although I don't intend to do any dry curing of salami, etc. anytime soon. I think I'll wait 'till I can see yours in action.
