all the big boys are playing w/ charcoal and wood. I want to play w/ charcoal and wood too. see smoke, i got skills. that's right, I got kettle attitude. I've been cooking on weber kettles for along time. I am very comfortable cooking on them. I can cook just about anything on my kettle.
this is how us kettle guys roll!fired up 10 coals.
my version of a fuse burn. i took apart my weber charcoal baskets and used the curvy part to line the back wall and your the straight pieces for the sides of my foil pan. I stacked the briquettes and apple wood around the outer edge. cool huh.

3 1/2 hours i have used about a 1/3 of my fuse @ 275° more or less w/ no automatic temp control at all. just me drinking.
took the ribs off and i still have a lot of fuel left after 4 1/2 hours (i over cooked the ribs some).
they were good though.
got a baby smoke ring. they were dry. had to drink milk to eat them. the flavor profile was outstanding. if i just took them off 1/2 sooner.
i got 7 1/2 hours + on my fuse burn. just think what i could do w/ a 26" weber. should not have sold mine 6 months ago. ummmm....... how do i get a 26" kettle. i'll work on that.
note to self: pay attention dummy. only have 3 cocktails not 5.
