Between you and LA the charcoal makers would go bust...y'all don't use enough charcoal to keep them in business. 
Now Smoke, on the other hand, would probably make up for their lost revenues, so I guess it would all balance out.

Just a question...would it help if you had a water pan on the rack with those ribs?  Could that help keep 'em moist?

I don't care what you say, your ribs are always outstanding. Makes me want to go back to the way I learned how to cook ribs.

I have never used water in my pan in my WSM.  I will give it a try next time and let you know.   :)
