best butt i ever made

I have made all my butts on my mak or other pellet grill for the last 3 1/2 years or so.  this is the 1st one I have ever made on the big nasty.  never cook another butt again w/ out charcoal.

time for smoke.  whiskey sounds good to.  where's my crown?





got my can and pliers ready.  full ring w/ 5 chucks of apple in there.



10 hot coals in can.



can removed.



muebe always taught me if you want a good butt but some sticky stuff on it.   ;)



love the color.



I drown the butt w/ won of my favorite rubs.  FSB!  you want your butt to taste just simple wonderful.  then use some FSB!.  I love this stuff.

perfect temp.  time for a cocktail.   ;D



it was windy last night so I build a wind break kinda.



big smile, big smile.   :D



before I want to bed I closed one of my vents and used this as a measurement for the other two vents.  high tech all the way over here.

I need a smaller WSM.  that butt looks small.  maybe it shrunk? 

massive barkage.



time for some more FSB and apple juice.



wrapped and put in microwave for 2 hours (I don't use a ice chest to hold my meats). 




sorry no pulled picks.  my wife and daughter pulled some for me and took the rest of it down the street for a party.   :P  it was the best butt I have ever cooked.  flavorful, great bark, color.  never cooked a better one before.  happy, happy, happy. 

oh, did you hear?  weber is coming out w/ a 14.5 WSM on October.  i'm getting one.

yes it is. it's my electric cambro that I am also selling.  cambro was $500 and wheels were $150.  I have used it a few times for catering and what not.

Wow! I just love your movies. The pics very much help me learn good setup. Doing one of these tomorrow, but was going to use the fuse method from your last cook.

Did you have plenty of fuel left? About how big was the poke? How long was it on?

this is what I had leave after I took the butt off.



my temp stayed around 240° or so for along time.  I put the butt on at 9 last night and forgot when I took it off but my heat stayed at 240° for about 16 hours.  at 9 pm the WSM was still warm temp was 140.  it was 95° that day also but Little Blackie was in the shade.

as always your were right LA.  I love my webers.  I want to get a weber silver tattoo'd on my calve but have to wait until my wife goes on a business trip.   :P

I had the "small" Weber SM - it worked great for  me. I just didn't use it enough. It still works great (15 years) for my brother!

You know, when you come up with a result like that with such high quality, one wonders about what you do with that WSM and the results that can be achieved from a ceramic egg type of device. Considering that the "egg" device is in the $800 to $1000.00 range, and the WSM is priced significantly less, I would say that you have the better deal.

It is obvious for sure that you are the more professional cook using the tools that you have.

I would, but he won't even give it back to me! I found religion - but he said... too bad, dude. The good news is I get good food when I go to visit!
