pork loin back ribs

Well, after all the mention of ribs recently, I decided to cook a couple racks  (I believe it best to cook more than the amount of food I need vs undercook when using charcoal)

I had bought the ribs on friday, rubbed them down and vac packed them and they sat for 2 days

So 2 racks went on last night as I enjoyed a 6 pack of dos XX for cinco de mayo

Both re-rubbed with my own rub creation (a spicy rub), and then onto the smoker
2-1/2 hours at around 225 bone down
Then in foil bone up for 1-1/4 hours with 1/2 cup apple juice each
Then pulled from foil for 20 min bone up, 20 min bone down, another 20min bone up and finally another 30min bone down to really cook in the sauces. Slathering with sauce every time they were flipped

One rack was done with Stubbs original and the other with old mule "hot" as the label says (stubbs rack in front, old mule rack in back)

These are good eating and will make a couple good meals for myself this week

While I was cooking the ribs I also did 4 of the bacon wrapped sriracha onion rings seasoned with super pig as an appetizer, yea all the other post about these made me do it.



 Put them on the smoker 20min a peice to impart a little smoke then into the oven for 90min at 275, had to smoke 1 ring at a time since I didnt have much extra space in the smoker

I had some boars head Chipotle gourmaise that is used for a dipping sauce
boy were they good eating too!

Great looking ribs and rings. What smoker did you use? To get some extra space I've seen others and I too have rolled the ribs. I will add my small round rack that I still have from my Ronco that will give me a little more room.

ow me to add my pics of bacon-wrapped onion rings...even a backyard jack can smoke 'em...I'm sure YOU can, too.

I hate to make it sound like  an easy cook because it took me nearly 8 hours from prep to finish (I'm lyin'...)

Check the pics - very good snack while you're waiting for the ribs to finish or for any reason...

I used my 30 gal uds, it is my go to cooker when doing low and slow pork
I never thought to roll them, do you need anything to keep them standing or will they naturally remain upright?
Also, how does mopping with sauce do when rolled on the side? As I like to really layer on the sauce personally
