OK Mike (muebe) here's my smoked prime TRISKET!! 8) ... Used your recipe pretty much to a tee :D
It was an unqualified success. I will say that SWMBO gave me the evil eye when I pulled the Tri-Tip at 140ºF to wrap in foil cause that's the sweet spot for me - when my Tri-Tips are so tender you can cut them with a fork and she says it melts in your mouth. I was somewhat skeptical but the results were delicious. Very moist and tender results. Sure is a lot easier to cook than a brisket and to me tasted a lot better than a brisket. Also since there's only the 2 of us it's a lot cheaper to smoke/cook a TRISKET than spend $30 - $50 for a brisket.
Rubbed the Tri-Tip with EVOO & Fagundes Prime Rib Rub. Wrapped in plastic and refrigerated overnight. Smoked at 225ºF to an IT of 140ºF (2 hours) - double wrapped in foil - bumped pit to 300ºF till IT reached 200ºF (1¼ hours) - rest in foil for 15 minutes. For planning purposes only: 4 hours which included preheating.

It was actually Jim(JimsBarbecue) who convinced me to try making a Trisket.

Yes it is a frog mat Subvet. Been using them since day one and use them for everything with great results.
My Son retired from the NAVY last November. He was a sub mariner too. He was a nuke and a mustang. I spent 9 years as a Sonar Tech in the 1970s looking for subs :D

Muebe had put in overtime to convert me on this technique. Still haven't done one cuz tri-tip is like unicorn here. And I'm still pretty sure my wife would give me the look if I did one this way.

Congrats to your son for staying until retirement. And kudos to you for listening to all those weird noises for 9 years. I hope you found some of the bad guys. I was a Radioman on an old WW2 era diesel sub and then on a nuke boomer in the early '60s. Great times on both serving with some super guys that I am still in touch with.
