Title: Overnight Brisket
Post by: sliding_billy on May 30, 2020, 05:39:29 PM
Beautiful choice brisket trimmed and ready for the pit.  13 lbs before trim.  Not even a half lb needed trimmed.  No plug fat at all.  Thick floppy flat too.  Gotta love when you find a nearly perfect brisket for $1.67/lb.  Running overnight, and wrapping in the early morning to slice and serve for lunch tomorrow.

Where’d the brisket come from? That’s pretty cheap.

Enjoy that brisket!   Beef prices are WAY up and briskets in our area are OUTRAGEOUSLY expensive right now!

Put a fork in me.  I'm done.  Very happy with the results, especially the cookie and smoke ring.

Cooked it on the Copperhead.  Very low and very slow (along with a little sugar and coffee in the rub) is the only way to get proper color on brisket with that one.
