Tired of negative posts on social media, here is a picture of a pile of meat LOL. :o ;) ;D The actual story is about a freezer raid and finding forgotten meat. The other day, I was rummaging and found two flats that I forgot about. One was 6.25 lbs and the other 5.5 lbs. The reason I forgot about them was because they were packed/priced as $1.67/lb packers, and I bought them at the same time as a real packer (that I actually cooked) quite a while back. I put these right in the freezer since they were in Cryovac. I thawed them for two days in the fridge and cooked them yesterday. The smaller one (on top in the picture) was straight course S&P. The larger one is the same S&P base plus Peppered Cow rub and some coffee. Both were started at 275 until ~ 160 internal. The little one was wrapped in BP and the larger one in foil then temp bumped to 300. Strange thing was the small one was already cooking slower than the big one, and the paper slowed it down even more. Both probed easily at ~208 internal. The big one came out an hour earlier, but they were both rested on the counter for a few hours still wrapped so I sliced them at the same time. That's my story of the pile of meat that is going to make leftovers for a few days.

That looks great!! I believe I have a brisket somewhere in my big freezer. Might be time to thaw that out and get it smokin!

We finished the leftovers today for lunch. I'm going to miss it. I feel good about being a meat hoarder now. I have plenty in my chest freezer to get through the meat prices and shortage.
