Title: Pork Butt Derby

We decided to stock (STUFF) our fridges/freezers this weekend.    Started with 412 pounds of pork butts.     :o


Loaded and in the process of being rubbed down.

It was 48° and raining all day.    Not optimal conditions for cooking 400 pounds of pig meat.

So, out came the 'snuggie'..

We take a peak about 4 hours in.

A few of the butts are ready, so we do some initial pulling/chopping to get a feel for them.  Not to mention we were getting hungry.

10:30PM.   The butts on the far end away from the fire are just entering the stall.   Time to settle in for a LONG evening with our fuel wagon at the ready.

Around 4:15AM, they are all finally ready to come off.  Good golly...     No pictures from here on, as I was too tired to see straight.

We learned a brutal lesson about "evaporative cooling".   As soon as a load of butts started moving through the stall, the cooker temperature dropped like a stone.   Like 40°.    We had to build a monster fire just to get it back up to 250°.

After a 4 hour power nap, we got them all pulled yesterday (forget the chopping nonsense) and packed into 11 steam table pans.    No way to know exactly, but I'd guess we yielded around 225-250 pounds.    I'll bring a bathroom scale in tomorrow and weigh them all.   (and get some more pictures)

Very impressive squirt. I hope you were satisfied with the end results. That is a lot of work right there.

WOW! That is a whole lotta butt!

How much grease came off all those butts? Had to at least been a gallon!

Probably about 2.5 gallons..    And around 20 pounds of ash.

Really a great job, especially under those conditions.  You deserve a break today, or tomorrow, as the case may be. Is that your biggest cook in that beasty?

Yep.    Probably won't do that much again, as it took an incredible amount of fuel to power through the stall.   It was bringing a swimming pool full of water to a roiling boil.  The 45° temps and rain didn't help things at all.    Next time we'll do 4 cases of butts (just under 300 pounds), or spread the 6 across both smokers.
