My 680 Rec Tec only goes to 500 so I'm not sure what to say if yours shows more?    I do know that GrillGrats would help you out for grilling steaks.   

I would call Ben, ask him about the temps I'm sure there is an explanation of whats going on.   

OH and yes another good video!           I'm am so glad you joined this site! :)

I second the Grill Grates. THEY WORK.....I can set the MAK @ 350F - and get really decent grill marks on steaks.

Good video! I use grill grates a lot in my Traeger for burgers but for steaks I like my Weber gas grill and again with grill grates! Don

Ok,  grill grates it is,  still a little disappointed Rec Tec has a video of RT 300 grilling steaks without grill grates and they showed pretty decent grill marks.

Remove grease tray and heat deflector

line some foil around the fire pot

put the cooking grates back in  (leave out the tray and deflector)

set your grill grates on the cooking grates over the fire pot

turn your RT on and set it for 400

do not worry about what your read out says

in about 15 minutes you will have a mean searing machine....toss your protein on and enjoy...........

Around the auger shaft cover coming out ?   Not inside the burner right cause I would think that wouldn't work at all.

Another trick to try with them...Flip the Grill Grates upside down - and use them as a "flat top". You will not get those pretty stripes...but you will get the Maillard effect all over the surface of the meat, giving you that carmelized color and flavor ;)
