I made up a new batch of Jan's Rub the other day, and wanted to use it soon. (Thanks again KyNola and Jan!) It's a great recipe! I took about 5lbs. of fresh ribs that i bought from the butcher, and rubbed them down good with plenty of Jan's Rub. And into the fridge overnight. Today here was like a beautiful Fall day, sunny and 52F. Gave the pellet pooper a good cleaning and filled the hopper up with Lumberjack Maple Hickory Cherry, one of my favorites. Got her chugging along at 225 and after a fresh coat of Jan's the ribs went in. I mopped them every hour and although I prefer naked ribs, Mrs Hikerman requested sauced today, so to keep peace and tranquility alive, the ribs were sauced with Cattlemen's BBQ sauce, and at that time a ci pan of Bob's Red Mill cornbread was put in the grill. Temp was raised to 375F to finish all. They were as tender as could be, and were plated with the cornbread, Bush's baked beans and my dearest's kale salad. A fine meal for a chilly day! And now, my two best girls and I are taking a long walk I think with a nice cigar!
