Jallelujah butts
« Reply #-1 on: November 10, 2012, 03:45:12 PM »
Start with a couple of boneless Costco butts...

Slathered in Molasses then a liberal coating of Big Poppa's Jallelujah Bacon Jalapeno Rub was applied...

Onto the Memphis last night at 8 P.M. at setpoint of 220F and the A-MAZE-N tube smoker loaded with Maple pellets...

Both butts reached a IT of 200F at 12PM today(16 hours)...

That molasses makes for a great bark!

Now to FTC for a few hours...

These Nutrisystem coolers are great!

Memphis hopper was filled with 12lbs of pellets and this is what was left after 16 hours...

The temps did dip into the low 30s last night and it is currently 54F. The Memphis did fantstic with pellet usage ;)

More pics later when they are pulled.

I like a lot of bark and it looks like you got it.

Again it is proven the Advantage is very economic

Time for a sammie...

Ghost Pepper Smoked Cheese  :o

That Jallelujah rub was great on that bark! And the Jallelujah seasoned salt was great for the finish :)

Yes the ghost cheese is really hot!

it looks fantastic.  love the color.  how was the rub?  flavorful, saltly, sweet?

Sparky the rub is sweet with a good bacon flavor and heat from the jalapeno. BP made a really good rub.
