I was digging through the chest freezer and found this:
Apparently I bought 2 of them when they were on sale from $15.99 a lb down to $8.00 a pound about 18 months ago and they have been in the freezer since.
They are labelled "PSA Whole BNLS Tender (untrimmed)". Choice Angus
So what do you think it is? Tenderloin? Shoulder tender? And once we solve that mystery, how should I cook it?
