Country ribs on sale @ $1.49/#, I bought 6#.  Cooked until tender, then de-fated and de-boned.  Used the great juices with some chicken broth and cooked the veggies until almost tender.  Diced the pork and added to the veggies ( potatoes. onions, carrots, green pepper, celery, black eyed peas, 1 tsp cumin, 1 tsp oregano, 1 tsp thyme, S&P and 1/4 tsp cayenne.)  Let simmer for 30 mins until I could make some corn-sticks for dipping.



It was different and delicious.



I will do this again.

These are not corn fritters but corn bread in a CI corn stick pan.
