Football Brisket

Another year of Fantasy Football is upon us so it is draft day Brisket.

Forgot to weight the brisket, but it hit the pit at 611a, and came off about 5pm.  Sliced it 45 minutes later and it was pretty good for my first offset cook in 2 years.  Little kids around makes it hard for me to do much on the offset, but it truly is like riding a bike.  Temperature spikes were limited to 2, first half way through trying to break the stall, which happily was only about 75 minutes, and toward the end once wrapped in butcher paper just trying to get it finished so I could focus on cornhole and beers.

Porter road had advertised pork brisket so I cooked that too, only 2 lbs and it was pretty good.  Basically tasted like boneless ribs. I would get again for the family next time I order from there.  We love their bacon and its more reasonable and better tasting than anything at the store.
