Started with two Costco Rib-Eyes marinated overnight in Soy Vay Vari Vari Teriyaki...



Out of the fridge 24 hours later...



Pre-heated the Memphis and the hopper was loaded with oak pellets...



Slapped them down directly on the grill. Can you hear the sizzle? ;)



After 3 minutes a 90 degree rotation and another 3 minutes then flip...



Nice sear marks on both steaks! And yes the Memphis can really grill ;)



I pulled the steaks for a few minute rest. Now time to change the setpoint to 400F for some garlic cheese bread...



And on goes the bread...



Now after 7 minutes it is done...



All plated...



A perfect medium rare...

Nice!   I figured that sauce would burst into flame, but it held up nicely...

That Memphis is looking properly 'seasoned' now!   ;D
