Thanks to Smoke, this is what my wife said about the pepper-stout beef I cooked!
Really,really good. Mildly smoky just a hint of sweetness, slightly salty, savory, just wonderful!
Served over last nites left over rice pilaf.
Followed smokes recipe except no jalapeño , sweet yellow onion, & used Gunpowder seasoning.
I may never cook a chuck roast any other way!

Great job LA!! You can swap out the chuckie and do a pork butt. The flavor profile works well with beef and pork...probably chicken as well.

Porceloin coated fire container & interior of main chamber.
I've got over 100 hours on mine & I'd be surprised if I can't make last 10+ years.
