 Over the very rainy weekend I decided to pull out the old tanker. Its been over a year since I used it.
 When I saw Tommy post though I had to use a real smoker... After cleaning it up and doing a hot burn in it I set up a high rack for some ribs.  I had pork and beef in the fridge ready to go.
 I seasoned them and let them rest for a couple hours, smoked them with oak and pecan for about two hours around 235. Then I wrapped them in foil and finished them off.
 A friend showed up for a hour so they stayed on longer then expected but it didn't hurt them any.

Sure glad you had enough room in the smoker for those ribs  ;)

Thank You for keeping it "real" with that cook  8) That is one sweet cooker and the ribs show it........just can beat real American wood for Que... 8) 8)

Question: did ya get the bark knocked off the splits? I stopped doing that a while back, can't tell no difference and I can still count to 10  ;)

 I did not knock the bark off. I didn't even use splits... I had some hole logs in the barn and I just chunked them in. Since I was burning out the tank first I just used the coals for the cook.
Sometimes I'll knock it off and others I dont.... Like you I can rarely tell any difference by the time the meat goes on.
 The tank will hold a lot of food! But the best thing is that it will hold 220-250 very easily on the main centered grates. Once it's hot it does require a lot of fuel to maintain. I use a camp grate to lift things farther up where 300-350 will hold. It takes practice and experimenting but that's part of the fun.
 I have a second tank that's a little smaller. I hope to make a vertical out of it and maybe even put a pellet pusher on it in time.

Yours looked every bit as good and I'm positive they were.  I did however get a "these are great" from Kerry and she ate them with out sauce twice now... I'll take that any day. ;D

Terry that is one Hoss of a cooker!  :o

I love the way you did beef and pork ribs both.  I'd be reaching for the beef first!

Terry, that is a great looking smoker. I love the way those ribs turned out.

There is a guy in Houston that has a trailer just like yours. He parks it next to a Shell station at Pinemont and Ella and sells bbq brisket and ribs right off the trailer. He has got to be making a killing because he has customers waiting in line all the time. He can cook a lot of good meat on that smoker.

Never used a tank like that and I know there is a learning curve, looks like you got yours dialed in nice
