It's mango salsa. Semi ripe mango, jalapeños, Fresno peppers, red onion,
Lime juice, toasted then ground cumin, some salt. Taste and adjust. Extra touch of vinegar.
Goes perfectly with ribs. No sauce on the ribs, the salsa did the job.
I offered the lettuce for low carb ribs tacos/wraps

Ahhh...even better! And if you have a recipe for that, or even some estimates of quantities - that would mak an awesome addition to the recipes section!
Beautiful balance of color/texture and flavors. You are right - when you have something as good as that sounds, why bury the meat in sauce? ;)

Tee,
Whole medium sized mango. Peel, get one slice and eat it. I was tasting the sweetness, I ended up eating a whole slice.
Now slice and dice the rest. LOL
One jalapeno, flesh only, dice
One Fresno pepper, diced. Or use red bell pepper and add cayenne.
About 2 tablespoons diced red onion
Juice from one small lime.
About a tablespoon white vinegar
Pinch of salt.
About a quarter teaspoon cumin
Mix in a bowl, and let the flavors marry for at least one hour. Then taste and adjust seasoning.
I didn't have cilantro, I'd have added about 2 tablespoons.

My bad.
That was cream cheese, bulk breakfast sausage, a touch of chipotle powder. Nix that mess and stuff em Anaheim peppers.
I didn't find large enough jalapenos that is why I went with Anaheim.
